Easy Crock-pot Chicken Wrapped with Bacon (Serves 4) 1 pound of chicken breast (tenders work best) 1 package of low fat Turkey Bacon (I like the one from Trader Joe's) 2 cans of Campbell's Healthy Request Cream of Mushroom Soup 2 cups of fat free plain yogurt or light sour cream (Yogurt gives it more tang)
Mix sour cream or yogurt with the cream of mushroom soup in a separate bowl, wrap bacon around chicken and place in crock-pot. Pour the gravy mix over the chicken in the crock-pot and set crock-pot on low for 6 hours or until chicken is fully cooked. Serve this over brown rice, quinoa or mashed potatoes. The gravy is fabulous to put over your veggies too! If you have trouble with brown rice turning out a little tough, invest in a rice cooker that is set up to cook brown rice or follow the directions below: Perfect Brown Rice Brown the rice in a pan till it is lightly toasted and is popping like popcorn but be careful not to burn the rice. When you think the rice has been dextrinized enough, pour 2 cups of hot water per every cup of rice into the pan and cover and cook over medium heat for 20 minutes and the rice should turn out great. |
